Will it snow?

The day is turning out to be quite gray and temperatures are below freezing. Will it snow today? Could we be so lucky? I'll keep you posted!

I made tuna cakes for dinner last night. Delaney seemed to like them just fine but it took William and Tinna at least 30 minutes to eat theirs. The cakes weren't bad, just a little dry. I served them on buns, with cheese for the kids, and I sprinkled mine with Old Bay. Corn on the side. I'll definitely make tuna cakes again but I'll have to tweak them a bit. I realized I pressed the tuna to get all of the water out and I shouldn't have done so. Recipe below.

Twinkies are going to school today. Delaney and I have to go get groceries. The girls pulled out all of the clothes in Tinna's closet last night while I was making dinner so now there is a huge mess to clean in their room. I informed Delaney last night that there would be no more computer time until it was taken care of. We'll see what happens after school today.

No luck on getting the video uploaded to YouTube. Not sure what is going on there. I'll keep trying, but don't hold your breath. I know the thing is about 3 minutes long and I'm sure the problem is not my impatience this time...I allowed the laptop to sit for about 2 hours yesterday. There's no way it should take that long to upload a 3 minute video!

iPod viewing last night: the pilot episode of "My So-Called Life" I can't tell you how much I love that show. Anyway, I'll be on a MSCL kick for awhile, I guess!



Tuna Patties Burgers Cakes.....something like that
Recipe #475047

9 patties 10 min 5 min prep

2 (6 ounce) cans tuna (drained, but not squeezed dry)
1 package seasoned stuffing mix (I used Cornbread stuffing, next time I'll try a different one)
2 eggs
1/3 cup mayonnaise
1/2 teaspoon dill weed (optional)
oil, to fry in

combine stuffing and seasoning packs (if separate) in a large bowl.

using a fork, thoroughly mix/mash together all ingredients (except oil).

shape into patties (I use my ice cream scoop and flatten the scoops into patties)

fry in a pan of hot oil until golden on each side (about 5 minutes).

serve with cocktail, tarter, or dill sauce, or put on a bun and have it your way!
