A whole lot of yummy goodness...

The food is still in my teeth. I can't even wash my dishes until I blog about how DELICIOUS tonight's dinner was! (Ok, Steve said "It's alright. The chicken is a bit dry" but I say to him "Pfft! Whatever!" *I* thought it was great. He doesn't know what good is.) I guess you're wondering what dinner was...Lime Chicken Tacos! OMG! Soooo good.

Here's the recipe for the Lime Chicken. I got this recipe from a neighbor when I lived in Iceland. She used to read a lot of cookbooks and try new recipes...because her kids were a bit older than mine and she had the time to do that. Her husband used to say "Chantel reads cookbooks like they are porn!" That's probably why she was such a good cook!

LIME CHICKEN

1 1/2 lb. skinless, boneless breasts, cubed
1/8 c. red wine vinegar
1/2 lime, juiced (I use the juice of the entire lime for added flavour)
1 Tbsp sugar
1/2 tsp salt
1/2 tsp pepper
2 cloves garlic
1 tsp oregano
cilantro (optional)

Saute chicken in medium saucepan over medium-high heat, about 15 minutes (I start with a bit of olive oil and then add 1/8 cup water once it gets going - drain when chicken is almost cooked through). Add remaining ingredients. Simmer 10 minutes more.

I bought a box of hard and soft taco shells because we like to use both at the same time and served the chicken with normal taco fixings (lettuce, tomatoes, shredded cheddar cheese, salsa, sour cream, etc.) Very tasty. The kids didn't complain once!
