Tropical Mini-muffins

Remember that fun "Mini Banana Nut Muffins" recipe that I posted a few days ago? WELL...here is the latest experiment and boy is it ever good! The twins had at least 5 of these this morning and won't stop asking for more. I had to threaten force if they didn't stop asking me for them.

Tropical Mini-Muffins

I used the same amounts of flour, butter, flax seed, and bananas as before but didn't put in the raisins. Below are the substitutions and amounts. I think it could do with a little bit more pineapple but all in all, they truly are wonderful.


~1/4- 1/2 cup finely chopped macadamia nuts
1/2 cup shredded coconut
8oz can crushed pineapple, drained


A few weeks ago, I was scoping www.craigslist.com looking for a serger. I do a search periodically trying to find one that I can afford. I usually don't have much luck, seems as if they are difficult to come by. One of my quilting friends in Tampa told me not to spend less than $600 on one. YIKES! What mom with 3 kids can really afford that??? So, anyway, I found a lady selling one for $150 here in San Diego. I'm off tomorrow morning to look at it. She says it is in it's original box and she thinks it has never been used. We'll see. I'm afraid to get my hopes up with it sounding too good to be true. I met a woman at playgroup who sews and serges so I'm hoping (if I DO get this one) that she can give me some lessons and soon I'll be sewing strip skirts of all kinds for me and the girls.

Tonight Steve and I are having a night out at "Forever Fondue", just 10 minutes down the road. I found a babysitter through a fellow Uzzie. It will be nice to eat without the kids constantly interrupting our conversation. Besides the fact that I KNOW this is a great restaurant because I just went there a few weeks ago with Heather and Kristin. Yay! Fondue. Only downside...Steven doesn't eat swiss cheese and that's just the best fondue there is. Oh well. Guess it's a small price to pay for a night away.
